“Strudel with spring herbs”
Recipe for 4 people
300 grams of spontaneous herbs like: silene, tips of hops and nettles, poppy buds etc, 150 grams of ricotta cheese, salt, pepper, grated Montasio cheese, half a cup of cream, olive oil, nutmeg, puff pastry.
After washing the various herbs, sauté in a pan with garlic and olive oil for 5 minutes, then pass them through a mixer or chop them thinly. Let the herbs cool down and then add the ricotta, salt and pepper and a pinch of grated nutmeg. Roll out the puff pastry ( homemade or ready made ), place the mixture on top and then roll it up.
Put the strudel on a greased baking dish and cook in the oven for 30 minutes.
While the strudel is being cooked prepare the Montasio sauce by putting the milk and cheese in a small saucepan in a double boiler and letting it melt .
Once the strudel is baked, cut it into slices and serve with the Montasio sauce.
